It is kinda like a batch code, some "Steppings" are more sought after than others as the might overclock better, run cooler / need less voltage to achive certain speeds etc.

Each Stepping is basically as Intel (or AMD) learn better ways to produce the Processors over the life of the chip, and/or fix different bugs and problems, and/or get it running cooler... for example (the only CPUs I know much about specifically) the core2 series were launched with a B1 stepping.

Since then there have been a B2 stepping (both of these had a 4MB level 2 cache, but with only half enabled - there were a few rumours about modding them to enable the other 2MB, but as far as I am aware that came to nothing), followed with L2 and M0 steppings (these only had 2MB of level 2 cache to begin with; I guess this reduced the manufacturing costs for Intel).

The Quad core chips also had a B3 stepping, and since had a G0 stepping released. This is the one for overclockers, as it runs with lower power consumption, and so overclocks slightly better, needing slightly lower voltage to reach similar speeds as the earlier revisions...

The Q6600 in particular has been the favourite for some time, due to the price/performance "sweet spot"...
