I use YamiPod , available from http://www.yamipod.com/main/modules/home/
Free, doesn't need installed, can be run directly from the Ipod's storage.
Works great for me.
By the way....
I HATE ITUNES!
I do too, but i use it for ease with my ipod. I do like winamp and ipod plugin.
Windows Media Player 11 :D
and use 'Tag and Rename' to sort out all of our music ID3 tags.
Then turn off media player's track information finder so it doesn't mess up the tags.
Also if you want to get rid of the annoying folder icons media player produces, turn of simple file sharing, and make a folder share that is read only, use this as your media library directory. This takes a long time if you have a lot of music, but if you do it once ad keep on top o fit, your collection is spick and spam :D
May i also add that i don't have an iPod, i have a Zen. So the above post will be of no use to you, sorry lol

I use Winamp.
Mediamonkey is alright as well, but slightly outdated GUI now.
I use YamiPod too.. file transfers work both ways, not just TO the iPod...
There's actually a very nice project that's been started by the folks at Mozilla called "Songbird" which seems to be an apt open-source iTunes replacement. I mean, for Linux -- Amarok is KING of all music software, and works with all the iPods so far.

OK, reviving an old thread, but (because i will never own an ipod) i use musicmatch jukebox v7.2, nothing better imo.
i use my pc mostly, i have a few dvd full of mp3 that i play on the dvd player thru my amp and my n95 if im out and about.
with the newer ipods you can jailbreak your ipod to transfer music wirelessly
it takes 45 seconds to jailbreak now, with the new tools
see here: http://lifehacker.com/370532/jailbreak-any-iphone-or-ipod-touch-in-45-seconds
Then you can use SSH to sync your library, you can do this in either linux or windows. I've been using SCP to install applications. Heres a guide that should help setup ssh syncing:
