So its a percentage from just those 3 meaning Linuz etc isn't included at all? I'll give 2 results then just in case I gave results for the wrong scenario, one (same as above) for the percentage of entire users and then one for if the 3 are supposed to make up the 100% by themselves (i just did some mathes from the first to make them up to 100% evenly).

For % of users in total using those 3 OS
XP - 40%
Vista - 13%
7 - 27%

For % of users just from those 3 OS
XP - 50%
Vista - 16.25%
7 - 33.75%

Your browser tells our webserver, basically. The OS is sent as part of the User-Agent information which browsers submit when making HTTP requests.

Yeah, thats why I asked if the % will be out of these 3 operating systems, or if we are taking others into account. As you say, most have gone for the 100% total but others have taken other OSes into account, so I think it will only be fair to have figures for both and pick the closest person to that..

"Do I want to release a video using Silverlight on my website?"

Let's take a look at the statistics and see. If you find that your website has like 30% of people visiting it using Linux... probably best not to given that Silverlight is a Microsoft technology.

Your IP address as well as some browser information. For example here's the information that's transmitted whenever I visit a page on Firefox:

Mozilla/5.0 (Windows; U; Windows NT 6.1; en-GB; rv:1.9.2.8) Gecko/20100722 Firefox/3.6.8

Yup, what Peter said. This information is then stored (for each 'hit') in the webserver logfile. This is just how it's always worked, it's not something we do 'specially'; generally all webserver logfiles will contain this info, which gets submitted by the browser, by default.

Based on that you can come up with proportions by using logfile analysis software (although in fact we're getting our data from Google Analytics, which works slightly differently, being based on a 'tracker' which passes details of every page hit over to google to track).

Also as Peter said, it's a good idea to know what software your visitors are using, as this can have an impact on the technologies you use to implement the site and also how you test it - for example if we noticed that the WebNinja9001 web browser was becoming increasingly popular, that would be included in our testing practices.
