im running 2x2gb pc2-8500

if i was to add another 1gb stick in one of the spare slots would it affect my dual channel ?

Short answer: Yes.

You need to match the current sticks so you could get away with another 2x2GB if you had the room on board.

cpuz reports memory in dual channel ?

Interesting your bios what does it say at boot up? dual ganged? virtual gang? your board might get away with doing it by sharing a bank, usually it will drop the memory to single channel when it's unmatched.
