Decided today that I would make some bread (never actually made bread before, just flatbreads like chapatis), I used a simple White Farmhouse recipe and here are the results

Very impressed for a first go.

Need to get myself some Wholemeal flour as I currently only have Strong White then I will try some other recipes.

Did you kneed by hand ?


My wife used to do a 60/40 white/wholemeal :)

Yep all done by hand, except the slit on the tip :)

I will probably go 75/25 next time.

My mate's mum used to make brown bread using her breadmaker, had all the seeds & what not in it & was still warm - best tasting bread ive ever had!

I make most of the bread in the house. I cheat though and use a bread maker to do all the kneading. The bread maker itself is actually too small for the amount of dough I make, so it only gets used for kneading :p

Tried all sorts of recipes, garlic and herb, cheese and onion, granary/wholemeal, granary and walnut etc... Need to get some Strong white flour and add walnuts and nutella for my next one. I can only imagine what jam butties will taste like on chocolate walnut bread :D

The best bread I've ever made was unkneaded.

3 cups strong white flour (or 2 strong white to 1 wholemeal)
1/2 sachet of instant yeast (can use fresh if you want, more hassle though)
1 tsp salt
1 1/2 cup ish water (depending on absorbancy of flour). Play it by ear, you want it slightly wetter than normal dough though


Mix well in the bowl, leave to rise for about 10-15 hours (no longer than ~20 or it'll start to collapse).

Dump out onto a board and knock back for a couple of seconds, proper kneading isn't necessary.

Chuck it back into a lightly floured bowl for a couple of hours.

For rolls, preheat the oven to gas mark 8, split depending on how big you want them and put them on a floured tray. Bake in the middle of the oven until properly browned (takes about 35-40 minutes in our oven but it's a piece of junk).

For a loaf, preheat oven to gas mark 8, put a large empty pot or oven safe saucepan in the oven to heat up. Dump the dough in then cover (foil is fine if you don't have a lid) and cook for ~30 minutes. Uncover and cook for another ~20 minutes until it's properly crisped.

Leave to cool on a wire rack for about quarter of an hour.

Asda do some lovely selections of flour, I think I've tried em all lol. They also do a 3kg bag for about £2, bargain as it's Allisons.

I've only just got a decent mixer, I've been through about 5 over the years, bread is a proper mixer killer.

Oh and nice looking bread there! Does look slightly doughy though, maybe too long/short proving?
